Rum Balls Recipe


But, why is the rum gone?  Because we made rum balls!  A southern holiday tradition, rum balls are sweet, gooey, and chewy. 


Ingredients:

1 (12 oz.) box Vanilla Wafers

1/3 Cup Cocoa

1 cup Ground Pecans

3/4 Cup Confectioners' Sugar

1/3 Cup Rum

1/3 Cup Light Corn Syrup

Sugar for rolling


Directions:

Let out all your frustrations, by starting with crushing the wafers with a rolling pin (place them in a large zipper bag first to avoid a mess).  You’ll need to have 3 cups worth.


Mix the wafer crumbs with the cocoa, pecans, confectioners’ sugar, rum, and corn syrup in a large bowl.


Form the dough into a large ball, and refrigerate.  When the dough is firm, pull off walnut-sized pieces, and form them into balls, roll them in more powdered sugar.

Yield:  3 to 4 dozen rum balls
