Fruitcake Recipe


Here’s a classic fruitcake recipe, just like your mom used to make.


Ingredients:

5 Eggs

1/2 lb. Butter

1 Cup Sugar

1 Tbsp. Vanilla

1 Tbsp. Lemon Extract

1/2 tsp. Baking Powder

1 3/4 Cup Flour

1 lb. Candied Pineapple

1 lb. Candied Cherries

4 Cups Pecans, chopped


Directions:

Start by cutting the pineapple into chunks and cutting the cherries into 4’s.


Cream the butter in a mixer and add the sugar slowly.  Beat the eggs and add them to the sugar mixture.  Add vanilla and lemon extract to the sugar mixture.


Sift in the flour, and then sift again with baking powder.  Throw in the cut up fruit into the flour mixture and stir the fruit to coat it.


Gradually add the fruit/flour mixture to the sugar mixture until all of it is combined.  Pour the batter into 2 greased and floured loaf pans.


Start the fruitcakes in a cold oven set to 250 degrees F.  Bake for 2 to 2 1/2 hours.
